Excerpt: Susceptibility of Monosaccharides to Oxidative Degradation The spontaneous reaction of monosaccharides with oxygen in aqueous solution under physiological conditions (pH 7.4, 37?C) is, perhaps, one aspect of chemistry of monosaccharides which does not normally give the toxicologist cause for concern. Yet this process has been known for many years (1) and produces potentially noxious a-oxoaldehydes, otherwise known as osones and glycosuloses. Over the short term (hours), sterile aqueous solutions of monomeric and oligomeric hexoses can be stored without significant deterioration by nonenzymic oxidative processes.
